Optimization for Extraction Proteins from Pulp of Watermelon Seed

The study was carried out in the laboratories of Faculty Agriculture / University Tikrit to period 2017/11/7 - 1/5/2018. watermelon seed pulp local variety, obtain protein isolates graft after removal fat. results showed chemical composition imported and variety percentage moisture 2.9%, 2.5%, ash 4.2%, 3.8%, fat 41%, 40.2%, carbohydrates 19.4%, 18.5% respectively. result show that at important locally were 32.5% 35%, seeds (imported local) 4.2% 4%, 1.9% 23.5%, 21.8%, 49.2%, 48.4%, 21.2%, 23.3% this best conditions preparation extract from defatted seed, by extraction with distilled water equalized pH 12 ratio bran: 1:10 (w:v) for 60 min ,at agitation speed 500 rpm/min, followed sedimentation isoelectric point .
